Carbonated Pineapple Jalapeño Lime Tequila Cocktail
1 Part Pineapple, Jalapeño, Lime Infused Tequila*
3 Parts Mineral Water
Mix 5 chunks of pineapple (~3/4 cup), 4-5 slices of jalapeño (taste test to ensure they aren’t extremely hot), and 1 fresh Lime-juiced with 1.5 cups of good quality tequila.
Steep in the refrigerator for 24 hrs.
Feel free to muddle the ingredients for a better extraction.
Fine mesh filter the tequila into a container; can store up to 3-4 weeks.
Mix all ingredients.
Chill for 6 hours (helps to increase the CO2 dilution).
Force carbonate for 3 pumps.
Serve over Collins Ice.
Add pinch of kosher salt or Tajin salt for an extra kick.
Garnish with pineapple fronds.
